Juli 2010AbstractThe second derivatives of thermodynamic potentials are directly related to thermo-dynamic susceptibilites like heat capacity and compressibility. Such susceptibilitesare strongly enhanced in the phase transition of lipid membranes corresponding tohigh fluctuations in the variables, e.g. in enthalpy and area. Not only are phasetransitions found in simple component lipid membranes but they also occur in bio-logical membranes of simple organisms. When growth parameters of bacterias arechanged then also the measured transition temperatures changes. In the contextof enzyme-membrane interaction, phase transitions mark the temperature at whichthe activation energies of various lipid vesicle bound enzymes decreases when themembranes melted from the gel to the fluid phase. In addition, the activity of lipidvesicle bound Phospholipase A2 has been found to exhibit a maximum when themembrane is in its phase transition.In the present study the attention was directed at the investigation of membrane-enzyme-hydration-layers based biological interfaces.
