Introduction
I love and believe passionately in vegetarian food which I eat in vast quantities, although not exclusively. Let’s get one thing straight, the Cosmopolitan Vegetarian Cookbook is not about cooking lots of lentils or nut roasts, it is about enjoying lots of our favourite ingredients, like pasta, rice, vegetables, fruit and nuts, in an inspirational and quick way. It is an exciting topic for a Cosmopolitan cookbook as it is a chance to share recipes that really are fresh, fast and fashionable. This is a cookbook for vegetarians and non-vegetarians alike, to dip in and out of.
I have highlighted the recipes in the book suitable for vegans with a V; the difference being; vegetarians do not eat meat, poultry or fish; vegans do not eat any food that is a derivative of animals, that is dairy food or byproducts derived from animals like gelatine.
Fashionable
There are so many fabulous, often foreign, vegetarian ingredients available in the shops today, including the local supermarket, that it makes it easy to develop imaginative vegetarian recipes that can be cooked at home. In other words, we eat out and taste these amazing dishes that have a real foreign flavour but we can now have a go at similar, but often much easier, dishes at home.
I have taken a selection of the more unusual, with everyday ingredients, added a little imagination and a short amount of time to create a range of quick and modern vegetarian recipes for you to have fun cooking and enjoy eating. Well, I certainly enjoyed developing them and judging by the size of my chief tasters who consumed two or three dishes each night, they also enjoyed eating them.
Some of the recipes have been influenced by the flavours from Japan, others Morocco. Many of the recipes have a Mediterranean flavour, inspired by holidays and time spent in Italy, France and Spain.
Recipes for Everyone
The most important thing to remember is that these recipes are for everyone, vegetarians and ardent carnivores - the latter may like to get their teeth into some of these dishes every now and then as well as occasionally eating fish or chicken alongside.
Fast
We are busy, there is no denying it, and often we choose what to eat depending on how long we will have to spend in the kitchen or how long it will take in the oven. So, to help you make that decision, I have broken the recipes down to those that really are quick, those that require about 15 minutes (depending on how long it takes you to chop an onion) and those that need more than 30 minutes - giving you the chance to do something else while it cooks in the oven.
Flexible
Many of the recipes are suitable and scrummy for a variety of occasions - whether for a simple supper at home or a dinner party for a few friends. I hope to show you that you do not need to spend a long time making fancy or elaborate dishes to impress. It is possible, when entertaining, to spend a minimum time in the kitchen and a lot of time with the guests.
Easy
I believe the recipes in this book are straightforward and easy to follow. I have given quantities where I feel it is necessary but, in some recipes, where personal taste is more important than an exact gram or ounce, I have left measurements more flexible.
Vegetarian Diet and Nutrition
A vegetarian diet, with or without dairy food, can supply all the nutrients needed for health and vitality. There is more and more evidence that a vegetarian diet of fresh, natural and, where possible, raw foods, not processed and not refined, can help reduce the incidence of cancer, heart disease, diabetes and other afflictions.
There is no need to panic about eating the correct balance of vegetarian food, all we need to do is eat a good mix of ingredients. To help us under
