Unlike traditional boats that are normally made out fried taro, the boat is made out of cod fish.The entire dish out of seafood, with the flag being a thin crispy mesh of fi pièce de résistance has been selected to enter the Hong K Tourism Board’s Best of the Best Culinary Awards in prev “The presentation of the fish boat is exquisite and the seaf fresh,” Ho says. “I don’t eat beef or lamb in general and tend to enjoy the most. I find seafood very healthy and nowadays peopl very health conscious. It’s very important to have good-q ingredients in the dishes, which is why I think this dish is In general, I’d rather spend more money on food to get a quality dish, because that’s what you are putting inside your body.” Reflecting Ho’s philosophy of accepting only the best, Cuisine Cuisine sources the freshest premium produce; seafood is delivered daily and ingredients are mainly organic, so diners are guaranteed only the healthiest flavours. One little known fact about Cuisine Cuisine is that the kitchen makes its own soy sauce. Using natural Canadian soybeans, sun-dried and brewed without the addition of colouring and preservatives, Cuisine Cuisine creates a soy sauce that complements every dish, from fresh seafood to dim sum.
The ambience and environment of Cuisine Cuisine is also a deciding factor in Ho’s preference for the restaurant.The high ceilings, elegant decor and stunning harbour views soothe him. “I love the outdoors and dining al fresco.There aren’t many places in Hong Kong that allow you to eat outside.Although Cuisine Cuisine is an indoor establishment, the view and large windows give me a feeling of being outside. I can just stay here all day and stare at the view. It’s very inspiring and, as a designer, inspiration is the most important facet of our creations.”

executive chef chan kam-shing Executive Chef Chan Kam-shing counts among his many awards the prestigious international accolade of Chef Rotisseurs from the Chaine des Rotisseurs. Despite having entered the field over 30 years ago, Chan’s interest in cooking has not subsided.
