ASIAN CABBAGE SALAD WITH CUCUMBER & PEANUTS
4 servings Source:Fish Sauce Greats
1 head white cabbage, cored, thinly sliced
4 garlic cloves, chopped, up to 6 ½ English cucumber, sliced 1 carrot, coarsely grated
½cupdistilled white vinegar 3tablespoonssugar or honey
3tablespoonssoy sauce or fish sauce 2 fresh chiles, seeded, chopped ¼cupmild vegetable oil cupsdry-roasted peanuts, coarsely chopped 2tablespoonscilantro, coarsely chopped
Toss cabbage with garlic, cucumber, carrot, vinegar, sugar or honey, soy sauce or fish sauce, chiles and vegetable oil.
Chill until ready to serve, then top with peanuts and cilantro.
ASIAN CHICKEN SALAD OVER RICE NOODLE CAKE

1 whole chicken breast,
skinless, boneless
1
Fish Sauce Greats
1 whole scallion, thickly sliced
2 quarter-size pieces fresh ginger, smashed 2cupschicken broth ***DRESSING*** 1tablespoongarlic, minced 1tablespoonfresh ginger, minced ¼cupfresh lime juice 2teaspoonsThai fish sauce, to taste 1teaspoonminced seeded jalapeno chile, if desired

2teaspoonssugar salt cupsvegetable oil ***SALAD*** 3 scallions, julienne 1 carrot, julienne 1cupblanched snow peas, julienne 8 large basil leaves,
chiffonade 8 large mint leaves, chiffonade 2tablespoonsminced fresh cilantro
8ouncesrice noodles oil for deep frying
In a saucepan combine the chicken with the scallion, ginger and salt to taste.
Add enough of the chicken broth to just cover. Bring the liquid to a boil over moderate heat and simmer, covered, for 8 to 10 minutes, or until chicken is just cooked through. Let cool in broth.
Drain and cut into strips.
Make the dressing: In a food processor or blender combine ingredients and process until combined well.
In a bowl combine the chicken with the scallion, carrot, snow peas, basil, mint and cilantro.
Add the dressing and toss to combine.
In a deep fat fryer heat the oil until hot.
Add the rice noodles and cook until crisp.

Transfer to paper towels to drain. Arrange rice noodles on serving plate and top with the chicken salad.
ASIAN CHICKEN SLAW WITH PASTA
4 servings Source:Fish Sauce Greats
Salt, as needed 8ouncesAngel hair pasta or capellini ¼cupVegetable oil 2tablespoonsSesame oil 1 Garlic clove, minced ¼cupRice or white wine vinegar 1teaspoonSugar ½teaspoonDried red pepper flakes
2tablespoonsNuoc nam, bottled Vietnamese fish sauce, (optional) ¾lbs.Boneless smoked chicken or turkey breast,
- (to 1 lb) ½ small head Napa or Chinese cabbage, cored
2 Carrots, peeled ½cupPacked washed basil leaves
Bring a large pot of salted water to a boil.
Meanwhile, combine the vegetable and sesame oils, garlic, rice vinegar, sugar, pepper flakes and optional Nuoc nam.
Remove the skin and fat from the chicken and cut it into thin vertical strips, then across the strips into thin shreds and add them to the mixing bowl. Add the pasta to the boiling water and cook until it is tender but still firm to the bite, about 3 to 4 minutes.

Drain the pasta and rinse it under cold water to cool it completely.Drain the pasta again, pat it dry and add it to the mixing bowl.
Finely shred the cabbage and grate or finely chop the carrots. Roll the basil leaves up into tight cylinders and cut across them to create fine shreds and add them to the mixing bowl.
Toss the salad with the dressing and adjust the seasoning if necessary.
This recipe yields 4 servings.
ASIAN FISH PACKETS
4 servings Source:Fish Sauce Greats
¾cupscoconut milk, light 2tablespoonsfresh ginger root, minced
1tablespoonsugar 1tablespoonlime juice 1teaspoonfish sauce, Asian ¾teaspoonssalt

24ouncessea bass fillets, or grouper (remove skin, one fillet per serving) 4teaspoonsmint leaves, minced
The fillets should be the same thickness so they cook in the same amount of time. The packets can be prepared several hours ahead and refrigerated until ready to cook.
Combine coconut milk, ginger, sugar, lime juice, fish sauce and salt in small dish.
