Introduction
Being a tea lover and a fan of Japanese cuisines, it is not surprising that I often found ways to incorporate matcha and other tea flavours into my recipes.
I love how the unami flavours of tea make it versatile and suitable in a variety of recipes for baking and cooking.
Very often, the use of tea also means that there isn t a strong need for food colourings as we can simply let the natural colours of the tea show in the final creation.
In the recipes shared in this cookbook, I covered a wide variety of kawaii treats to fulfill your sweet tooth.
And yes, I promise that they not only taste delicious but are also visually appealing as well.

Basic Tools
In this section, I would like to introduce some of the basic and common tools used in this cookbook
01 Baking Tins/Moulds
A variety of baking tins and moulds in a wide variety of shapes and designs are available on the market.
02 Baking Trays
Basic baking trays are essential for baking. There are also a variety of baking trays that come with a variety of shapes and moulds, including those used for madelines and cakes.
03 Cookie Cutters
Cookie cutters are perfect for creating identical shapes of dough in large quantity, and often add that cute factor by providing certain shapes and designs.
04 Cooking String
Food-grade cotton strings can be safely used for decoration or cooking without imparting any flavour or residue in your food.
05 Digital Kitchen Weighing Scale
Another handy tool to have, the digital kitchen scale helps to ensure accuracy in the ingredients with every recipe. It is recommended to invest in one that provides a accurate margin, at least one decimal place in grams measurements for a precise measurement.
06 Hand Mixer
A hand mixer is extremely helpful when you need to whip a large batter or whisk items such as meringue with minimal effort. It also speeds up preparation and cooking time. The hand mixer usually comes with a variety of attachments, such as the whisk and dough hook.
07 Hand Whisk
A simple tool that does not require electricity and is easy to store, a hand whisk is a good option to turn to when the portions are smaller as it enables you to keep a close watch on the contents so that the timing can be more accurate. It also reduces the chances of overbeating the mixture.
08 Jelly Moulds
There are a variety of moulds in the market that are used to make jellies and other recipes that can be used in the recipes. Pick from your preferred ones.
09 Measuring Spoons
Another tool for measurement, measuring spoons allows one to measure both dry and wet ingredients in a simple and efficient manner.
10 Microplane Grater
This specialised tool with its stainless steel blades allow one to effortlessly grate through hard and soft foods and also acts as a zester for citrus fruits.
11 Mixing Bowls
Another essential in baking, mixing bowls are used to prepare a variety of mixture, batter and dough in recipes. A few recipes here require the microwave, and would require a microwave- friendly mixing bowl.
12 Pie Weights
Pie weights are used to add pressure when you are blind baking your tart/pie crust. The additional weight helps prevent the pastry from rising too high or shrinking from the sides.

13 Pastry Brush
The pastry brushes with natural soft bristles are great for dusting dry and non-greasy items, while those with silicon bristles would be better for wet ingredients such as melted butter and glaze.
14 Rolling Pin
This cylindrical shape tool can be used to shape and flatten dough. Rolling pins can be made with either wood, marble or rubber.
15 Scraper
A simple tool that is extremely versatile in the kitchen, the scraper can be made with wood, metal or silicon. It cuts through dough neatly and can often be used to scoop dough off the counter too. It can also do light work of kneading and working dough.
16 Serrated Knife
A knife with a saw or tooth-like edge is created for making neat cuts through foods of both hard and soft textures such as bread and cakes.
17. Sieve
A fine wire mesh that can be used for straining, sifting and pur eing.
18 Silicon Baking Moulds
In the modern kitchen, it is common to see the use of silicon moulds which have gained popularity in recent years. They come in a wide variety of shapes and designs readily available on the market. Not limited to baking, silicon baking moulds can also be used in refrigerators or freezer to create a variety of cold recipes.
19 Silicon Spatula
These lightweight tools with their silicon design is ideal for mixing and gathering food and ingredients from mixing bowls and pots. They are also durable, easy to clean, safe to use and heat- resistant.
20 Tart Tins
Tart tins come in a variety of sizes and shapes. Pick one suited for your occasion or serving size. I would recommend using those with a removable base, as it makes it easier to release the baked tartlet without damaging their delicate crust.
21 Tea Whisk
Known as chasen in Japanese, this bamboo tea whisk is used in traditional Japanese tea ceremony to enable one to prepare a frothy bowl of matcha.
22. Tweezers
This small tool is useful for picking up small objects that may be otherwise difficult to handle using hands.
