Introduction  
The story behind this book goes back to my childhood in 1955. From about the age of ten or eleven I loved being in the kitchen and learning how to cook. My most memorable times were with my aunt Bessie during my summer vacations. She taught me how to do everything from raising chickens and rabbits, working in her garden, fishing, picking vegetables and fruit for cooking and canning. Aunt Bessie loved to cook so she taught me many different ways to prepare food. She also taught me how to follow recipes and even improve them. Aunt Bessie was such a thrifty person she would never allow any food to be wasted; we even came up with way of using the extra fruit or vegetables that were not enough to use in a recipe or for canning. The excess vegetables were used in salads, and the fruits were used to top our homemade ice cream. I loved being with my aunt; no matter what we endeavored to do together she always made it fun. Aunt Bessie always said, “The way to a man’s heart is through his stomach.” At the time when my aunt Bessie passed away, she and my Uncle Frank had been married for over fifty years. They were not only still in love, but they were also best friends. To me those were the most treasured memories of my childhood. Since then, I have continued to collect and create recipes, and now I would like to share some of them with you.
The purpose for this book is twofold. The first reason is to raise money in order to purchase property with a Victorian home and a learning center as a transitional facility for women coming out of prison. This home and learning center will be used to give these women a second chance. This second chance is so they can learn to be law-abiding citizens. The women accepted in the program will not have violence or child abuse in their criminal history. Ninety percent (90%) of all the profits from this book will go toward the Second Chance Women’s Center a (501c3) organization.
In 1989, I joined the Malibu Women’s Prison Ministry under the covering of The Church on the Way in Van Nuys California. I eventually became the director over the ministry until April 7, 2006. During that time I began to realize the great necessity for a transitional home and training center for women being released from prison. This facility will give them a second chance to change their lives and regain the custody of their estranged children.
Much of the time these women are used as prostitutes, forgers and smugglers. Many of these women are frequently incarcerated for transporting drugs from their supplier, to their place of consumption or state to state and even across the borders. A large majority of women in prison have been sexually abused as children and the results have left them with low self esteem and self worth. Also we must realize that many of these women come from homes with an abusive father or no father at all. Therefore they haven’t had the opportunity or the experience of having a positive role model for themselves or a good fatherly role model for their children. Unless given an opportunity to learn new life skills when they are released from prison they are drawn back into unhealthy relationships and subject to become re-offenders. My desire is to give these women hope and an opportunity for a better life.
There are plenty of resources for men coming out of prison, but fewer places available for women coming out of prison that will provide the structure and opportunity to have a fresh start with newly learned life skills.
The second purpose for this book is to give the cook a tool to use when their mate informs them that he/she has invited his/her boss, co-worker, friends or family members over for dinner. This book will remove the overwhelming emotions of planning and preparing a complete meal. Therefore, it becomes fun and is done with ease.
This will also build confidence for giving dinner parties that are small or large, holidays or any days. This book includes a section on how to set a formal or informal table, and also a weight and measurement reference. Another unique feature includes information on which spices compliment different foods. Think about it, you can have a dinner party with your mother or mother in-law included on the guest list and not have to call her for any advice or suggestions. What an awesome surprise for them. Both of you can enjoy the honor of being a part of each other’s memorable moments together.

In general, silver that is used by the left hand is placed on the left of the plate, and that used by the right hand, is on the right. Forks are at the left. Knives and spoons are on the right.
