My Little SoHo Kitchen is a collection of recipes that capture some of my favourite discoveries and culinary experiences. From simple, timeless classics to new food trends, there are many reasons for me to step into the kitchen. After travelling around and meeting new people in the past year, food has taken on a whole new meaning to me.
To the lovely people who opened up their kitchens and invited me to share a meal at their table, thank you.
To the entire Marshall Cavendish team, thank you for your support and for giving me an opportunity to share more recipes and food experiences.
To Audrey, my editor, thank you for your friendly emails and encouraging words. I appreciate all your time and help.
To Julie, my photographer, thank you for your time and for sharing the East Coast culture with me.
To my favourite kitchen brands, thank you for the support and for sharing my excitement. To the wonderful team at Villeroy and Boch, you have brightened up my home with your beautiful tableware. I definitely feel part of the family now. Emile Henry, thank you for giving me a bit of France in New York with your lovely cookware. Laura Ashley, thank you for the gorgeous linens and my favourite apron. Cuisinart, thank you for confirming my belief that your products are essential for all cooks. Joseph Joseph Kitchenware, I m a chemist in my kitchen with your innovative tools. NuNu Chocolates in Brooklyn - deliciously addictive. Stew Leonards and Fairway Markets - my favourite places to shop when I can t get to a farm. A big thank you to Lockworks at Yale and Towne - the photoshoot wouldn t be the same without your help.
To my family, the eight most important people in my life, thank you for your invaluable support. Family BBQs, morning coffees and dramas at the table can never be replaced.
Jojo, thanks for bragging to all your friends about my first book, Building a Perfect Meal. You inspired me to keep going. Thank you for all the bacon-stuffed baked potatoes, Timezone games and encouraging hugs … of course I am thinking of you.

Introduction

Sitting on the kitchen counter watching my mum and aunt make dumplings by hand are my earliest memories. Growing up, I was spoiled rotten by lunchboxes filled with more than just chips and sandwiches, but I traded my mum s Taiwanese spring onion pancakes for Aussie vegemite sandwiches at school. I tried to disguise my background and did not understand why my mum packed such elaborate lunches, when all I wanted was a boring sandwich like the one in my friend s lunchbox. Fortunately, growing up and travelling around have given me the palette and curiosity to appreciate different cuisines and cultures. Diversity is what makes cooking exciting.
My Little SoHo Kitchen is not just for those living in New York. It is for everyone out there who wants to make fuss-free, good food in the home kitchen. The recipes in this book are inspired by friends and neighbours, and they are not too complicated even for a last-minute weekday meal. Some were created in my petit kitchen in Switzerland, others while I was a chemist in Japan - my tiniest kitchen ever! I even have a handful of recipes that I can and sometimes do use in a hotel room. So on days when you crave food that you can t simply get from across the street, pop into your kitchen and whip up something great. Don t let the restrictions of a small kitchen or the lack of fancy kitchen tools deter you. I can use a rice cooker to steam fish, poach eggs or boil beans. If I can t find a whisk, I use a fork. A blowtorch can work as well as an oven for toasting marshmallows. Just because I have a small kitchen doesn t mean I can t have fun.
The great thing about cooking is that you don t have to follow recipes to the tee - rather, use ingredients that you feel will work, or simply use whatever you have on hand. I have tried to keep the recipes simple and versatile, and it is my hope that this book can be a source of inspiration with every turn of a page.

Inspirations and Ideas

I love creating meals that are a little out of the ordinary. Not only does this give me the flexibility to quash all expectations when the dish doesn t turn out quite like the picture in the book, but it also gives me the chance to cook on a whim, using ingredients that are on hand for a simple, yet totally delicious meal. When it comes to cooking, I like to keep things simple. So, as much as I love food, I don t like spending too much time in the kitchen.
Having seen many cookbooks, food magazines and online foodzines, I didn t want to churn out another book with the same recipes you can find off the shelf. With celebrity chefs, famous cooks and food bloggers changing the way we see food, I want to write a book that collates everyday recipes with a touch of creativity. Nothing too complicated, I like to leave that to the experts, just
