AFRICAN-SPICED BROCCOLI AND CAULIFLOWER SALAD
2 servings Source:Spiced Greats
¾cupssmall broccoli florets ¾cupssmall cauliflower florets ½cupcarrot, 1/4" diagonal slices teaspoonsalt ¼teaspoonground ginger ¼teaspoonground cumin teaspoonground coriander
teaspoonground nutmeg teaspooncrushed red pepper 3tablespoonsfat-free sour cream
2teaspoonscider vinegar ½teaspoonhoney 2tablespoonsgreen onions, sliced
Steam broccoli, cauliflower and carrots in a covered pan 2 minutes. Rinse vegetables under cold water; drain well.
Combine salt, ginger, cumin, coriander, nutmeg and crushed pepper flakes in a small skillet; cook over medium heat 2 minutes or until lightly browned, stirring constantly. (Toasting the spices in a skillet brings out their sweet and hot flavors.)
Combine spice mixture, sour cream, vinegar and honey in a bowl; stir well.

Add broccoli mixture; toss well to coat. Stir in green onions just before serving.

2cupsapple juice ½teaspoonsalt ¼teaspoonfreshly ground black pepper 2tablespoonsflour
Melt half the butter over medium heat in a large skillet.
Add the onion and sauté until tender.
Remove from the pan and reserve.
Peel, quarter and core the apples.
Melt 1 tbsp butter in skillet and brown chicken breasts on both sides.
Add apples, Calvados, allspice, apple juice, salt and pepper to skillet.
Cover and cook over low heat 20 minutes. Remove chicken to a platter and keep warm.
Return onions to pan.
Blend together remaining butter and flour.

Stir into sauce and cook for 5 minutes until sauce is thickened.
Pour sauce over chicken and serve immediately.
Makes 4 servings.
APPLE & SPICE PIZZA COOKIES
1 servings Source:Spiced Greats
¾cupsButter, softened ¾cupsSugar 1 Egg
1 ½cupsFlour, unsifted 1 ½teaspoonsCinnamon 1cupApples, shredded
¾cupsOats, uncooked ½cupBrown sugar
1teaspoonVanilla ¾teaspoonsSoda ¾teaspoonsSalt Topping: 6ouncesChocolate chips 1cupChopped pecans ½cupPowdered sugar 2teaspoonsMilk
Beat butter and sugars until creamy. Add in egg and vanilla and beat. Add in dry ingredients and beat until smooth. Stir in apples and oats. Spread evenly on generously greased pizza pan.
Bake 20 to 25 minutes or until golden. Remove from oven.
While hot sprinkle with 1 (6 ounce) package chocolate chips. Let stand until soft then spread. Sprinkle 1 cup chopped pecans on top of chocolate.
Sift 1/2 cup powdered sugar, add 2 teaspoons milk. Mix until smooth.

Drizzle on top of pizza cookie.
APPLE BRAN SPICE MUFFINS

¼cuphoney ¼cupapplesauce, at room temperature 1teaspoonvanilla 1 egg white, whipped ½cupbuttermilk
at room temperature ½cupapples, chopped/grated ¾cupsflour 1 ½teaspoonsbaking powder

Preheat oven at 350℉.
½teaspoonbaking soda ¼teaspoonsalt ¼teaspooncinnamon ¼teaspoonginger ¼teaspoonallspice ¼teaspoonnutmeg ¼teaspooncloves ½cupbran ¼cupraisins
Prepare muffin tins with cooking spray and flour. In a mixing bowl, combine honey, applesauce, vanilla, egg white, buttermilk and apples. In another mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, nutmeg, cloves, bran, and raisins.
Mix wet ingredients with dry ingredients just until moistened. Use an ice cream scoop to fill muffin tins two thirds full.
Bake for 20 to 25 minutes.
