A PENNE FOR YOUR THOUGHTS
6 servings Source:Sundried Tomato Greats
1cupsun-dried tomatoes 3cupssliced mushrooms 12ouncespasta, penne uncooked
4 slices bacon, cut in 1/2" pieces 3 cloves garlic, minced 1cupred onion, sliced in rings 2cupsfresh spinach, chopped

2tablespoonsfresh basil, chopped or 1teaspoondried basil
½teaspooncrushed red pepper, optional** pepper to taste
2tablespoonsgrated parmesan cheese 2tablespoonschopped fresh parsley
Pour 1 cup boiling water over sun-dried tomatoes and let soak for 5 mins. Drain and chop. Set aside. Place mushrooms in a bowl with 1/4 cup water. Microwave on high power for 5 mins. Drain and set aside. Cook penne according to package directions, Drain and keep warm.
Cook bacon in a large skillet over med-high heat until crisp. Add garlic and cook 1 min. Do not discard drippings. Add onions, spinach, sundried tomatoes, cooked mushrooms, basil, and red pepper if using. Cook and stir for 4-5 mins, until onions are tender. Toss
