Melt butter in Dutch oven. Add sausage, cover, and cook without stirring about 7 minutes. Turn over and sprinkle 2 c. of onions on top. Cover and cook another 7 minutes. Should be dark brown sediment on pan bottom. Add 3/4 c. of stock and scrape bottom.
Add pepper and salt, stirring, scraping, and turning. Cover and cook 2 minutes, scraping once. Add celery, green peppers and garlic. Cover and cook 3 minutes, scraping once. Add tomato sauce and cook uncovered 5 minutes, scrapping occasionally.
Add 1/2 c. onions. Cook 8 minutes until large puddles of oil have broken out and tomato mixture is thick. Stir only if sticking. Add

parsley and 1/2 c. of the green onions. Add 3-1/4 c. more stock and scrape. Cook 20 minutes until liquid is thick dark red gravy. Stir occasionally.
Stir in remaining stock and onions. Bring to boil, reduce heat, and simmer, stirring frequently, about 14 minutes, until gravy is noticeably thicker but still juicy. Remove from heat and serve immediately.

½cupcider vinegar, plus 2tablespoonscider vinegar 1clovegarlic, minced ½teaspoonWorcestershire sauce Salt, to taste
Fry onion in oil over medium-high heat until golden, 3 to 5 minutes. Add preserves, pineapple juice, tomato sauce, vinegar, garlic and Worcestershire and bring to boil. Simmer until thick and flavors have melded, 1 hour. Add salt to taste.
Serve with pork chops or ribs.
This recipe yields 3 cups.
ARIZONA CHUCK WAGON BEANS

1 ½lbs.Chuck steak, cubed 1lb.Dried navy or pinto beans 1 ½teaspoonsSalt 6cupsWater
½teaspoonOregano, crumbled ¼lb.Salt pork, diced

¼teaspoonRed pepper 1 lg Onion, chopped ¼teaspoonGround cumin 10 Garlic, minced 8ouncesTomato sauce 1 lg Green pepper, chopped
Pick over beans and rinse well. Combine beans and water in a large kettle . Bring to boiling; cover; cook 2 minutes. Remove from heat and let stand 1 hour then pour into slow cooker.
Brown salt pork in a large skillet; remove with a slotted spoon to cooker; saute onion, garlic and green pepper in pan drippings; remove with slotted spoon to cooker. Brown beef, a few pieces at a time in pan drippings; remove to cooker with slotted spoon; stir in salt, oregano, red pepper, cumin and tomato sauce. Add more water, if necessary to bring liquid level above beans.
Cook on low for 10 hours or on high for 6 hours, or until beans are tender.
ARTICHOKE AND SPINACH STUFFED SHELLS

1 package frozen spinach, chopped and thawed 1cupfrozen artichokes, thawed
12 pasta shells, jumbo, uncooked
1cupricotta cheese, part skim milk 2tablespoonsbasil, chopped

Cook over medium heat until thickened, stirring frequently. Spoon 1 cup tomato mixture in bottom of an 1 x 7 x 1/2-inch baking dish coated with cooking spray. Spoon spinach mixture evenly into shells. Place shells on sauce in baking dish. Spoon remaining sauce on top of the shells. Bake uncovered at 350℉ for 30 minutes or until bubbling. Garnish with basil sprigs.

ASPARAGUS LASAGNA
1 medium onion, finely chopped 2 garlic cloves, minced
Cook spinach and artichoke hearts according to package directions, omitting salt; drain well. Chop artichoke hearts, and set aside. Cook shells according to package and set separately on a piece of wax paper.
Position knife blade in food processor bowl; add spinach, ricotta cheese, and next 4 ingredients. Process 30 seconds or until smooth. Transfer to a bowl; stir in chopped artichokes and sour cream. Combine stewed tomatoes, tomato sauce, cornstarch, and 1-1/2 tablespoons basil in a saucepan; stir well.
