ALMOST CHERRY GARCIA COOKIES
30 servings Source:Valentine's Day Greats
1cupDried sour cherries cupCherry-flavored brandy
½cupUnsalted butter at room temperature ½cupWhite sugar
½cupLight brown sugar, firmly packed 1 Egg 1 ½teaspoonsVanilla extract ¼teaspoonAlmond extract ¼teaspoonSalt

½teaspoonBaking soda 1 ½cupsAll-purpose flour ¾cupsCoarsely chopped white chocolate ½cupCoarsely chopped semisweet chocolate ½cupCoarsely chopped macadamia nuts (optional)
Preheat oven to 350℉. Line two baking sheets with parchment paper.
Plump the dried cherries by soaking them in boiling water to cover for a couple of minutes. Drain well and toss with cherry brandy. Let the cherries sit in the brandy for a couple of hours, or even overnight for the best flavor, then drain before using.
Cream the butter with both sugars. Blend in the egg, vanilla and

almond extracts.
Fold in the salt, baking soda and flour. Fold in the cherries, white and dark chocolate and, if using, the macadamia nuts. Batter should be soft.
Drop in generous tablespoons onto the baking sheets, leaving space between dollops of batter.
Bake until lightly browned around the edges, 12 to 14 minutes. Cool on racks. (Makes about 2 1/2 dozen).
AMAZU SHUGA (PICKLED PINK GINGER)

lb.Fresh, Young, Ginger root*
cupRice Vinegar ¼cupSugar

¼teaspoonSalt *Large pieces, pref. with pinkish skin, scraped
Using a sharp knife or a Beriner cutter,shave ginger root into paper-thin slices. In a small, airtight container, combine vinegar, sugar and salt. Blanch ginger for 30 seconds in boiling water. Drain ginger; cool. If desired, reserve liquid for cooking purposes.
Add cooled ginger to vinegar mixture; mix well. Store marinating ginger in the refrigerator. Pickled ginger can be eaten after 24 hours of marinating. It will keep several weeks. Good with either Sushi or noodles. Add marinade to salads or sauces.
Makes 1 serving.
BAY SCALLOP EN PAPILLOTE

4tablespoonsunsalted butter 2 shallots, thinly sliced
½lb.chanterelle mushrooms ¼teaspoonfresh thyme leaves Salt Freshly-ground black pepper ½lb.Yukon gold potatoes
¼cupclarified butter 2 large leeks 1tablespoonorange zest, thinly sliced
¼teaspoonground coriander ¼cupmirin (Japanese cooking wine)

2lbs.bay scallops 4tablespoonsprepared truffle butter === APRICOT MIGNONETTE === 2tablespoonsfinely-chopped shallots 2teaspoonsfreshly-cracked black pepper 2tablespoonsdried apricots, chopped fine
½cupwhite wine ½cupcider vinegar 4tablespoonsfresh tarragon leaves
Trim stems and slice mushrooms lengthwise 1/4-inch thick. Melt two tablespoons of butter in a large nonstick skillet over medium heat. Add the shallots and cook, stirring occasionally, until clear and translucent, about 2 to 3 minutes. Add the mushrooms and thyme; saute until tender, 5 to 7 minutes. Season to taste with salt and pepper.
Heat the oven to 500 degrees. Slice the potatoes very thin. Brush a baking sheet with clarified butter, and arrange the potato slices in a single layer. Brush the top side of the potatoes with the remaining clarified butter. Season with salt and pepper. Bake in the heated oven until tender, 5 to 7 minutes.
While the potatoes cook, prepare the leeks by halving and thinly slicing the white and pale green part only. In a large nonstick skillet

over low heat melt the remaining two tablespoons of butter. Add the leeks, orange zest, coriander, and mirin. Cook, stirring occasionally, until the leeks are tender, clear and translucent, 5 to 7 minutes.
Fold four 10- by 16-inch rectangles of parchment in half, matching the shorter ends together. Then cut out the shape of half a heart, starting at the bottom of the fold, as if you were making a valentine. Unfold the hearts.
Assemble each package by arranging a bed of 6 to 8 potato slices on one half of the parchment heart; then add layers of 1/4 cup leeks, 1/4 cup chanterelles, 1/2 cup raw bay scallops, and dollop of truffle butter. Fold the other half of the heart over the food.
Seal the package by folding the two edges of the heart together; allow enough room for steam to accumulate. Place the packages on an ungreased baking sheet, and bake until the paper puffs and the contents bubble, 4 to 5 minutes. Place package on a plate, and cut open just before serving. Accompany each with a small bowl of apricot mignonette for dipping.
APRICOT MIGONETTE: Combine the shallots, pepper, apricots, wine, vinegar in a small bowl. Season to taste with salt. Stir well to combine and set aside. Divide into four small bowls and garnish with tarragon before serving. (Makes about 1 cup) Makes 4 servings.
