1teaspoonchili powder 1teaspoonground cumin ½teaspoonground allspice
½teaspoondried whole marjoram

¼teaspoonground nutmeg 1 stick cinnamon, (3-inch) ¾teaspoonssalt ¼teaspoonpepper 2 cans no-salt-added whole tomatoes & liquid 14 ½ounces,chopped 4 ½cupshot cooked spaghetti ¾cupslow calorie cheddar cheese, 3 ounces 36 oyster crackers
This unusual way to serve chili--over spaghetti--is a solid-gold tradition in the Queen City. Coat a large Dutch oven with cooking spray; place over medium-high heat until hot. Add 2 cups onion and next 3 ingredients; cook until meat is browned, stir.
To serve, arrange spaghetti on individual serving plates. Spoon chili over spaghetti; top with cheese and remaining 1-1/2 cups onion.

ARTICHOKE AND TOMATO CHICKEN

Hearts thawed ½cupDry White Wine ½cupReserved Tomato Juice 1teaspoonDried Tarragon

½teaspoonSalt ¼teaspoonGround Pepper 6 Chicken Legs 2teaspoonsLemon Zest, grated 2tablespoonsParsley, chopped
Drain the tomatoes and reserve 1/2 cup juice. Slit open the tomatoes and pick out the seeds, drain the juices and finely chop the flesh. Combine the tomatoes with the artichoke hearts in a large skillet and place over moderate heat. Add the wine and reserved tomato juice and bring to a boil. Stir in the tarragon,salt and pepper.
Arrange the chicken legs in a single layer on top of the tomatoes and artichokes. Cover and simmer about 25 minutes, or until the chicken is no longer pink at the bone when slashed. Stir in the lemon zest. Arrange the chicken on a platter, spoon the sauce over and sprinkle with the parsley.
Per Serving: 242 calories, 30 g protein, 17 g carbohydrate, 5 g fat, g saturated fat, 96 mg cholesterol, 833 mg sodium, 9 g fiber.

2 ½qtboiling water ½lb.sliced mozzarella cheese 1cupcream cottage cheese ½cupcheddar cheese
Saute onion, garlic, and meat in shortening about 20 minutes. Add next four ingredients. with 1 tsp salt. Simmer for 40 minutes.
Cook noodles with 1 tbsp salt for 20 minutes; drain. Put 1/3 meat mixture in baking dish. Add layer of noodles, add 1/2 cottage cheese, 1/3 Mozzarella, and 1/2 Cheddar.
Repeat layers, ending with remaining meat mixture and top with remaining 1/3 Mozzarella cheese.
