The pastured poultry industry is booming, as consumers are becoming more aware of the health benefits of chicken raised without antibiotics, steroids, and fecal air.

The opportunity to become a farmer applies to a broad spectrum of people. It is a way for a couple to get into farming, and make it a full-time vocation. It is also a way for an elderly farmer to pass on the farm to his children.

Concentrated production is necessary because a processing plant can only service growers within a 100-mile radius or so. As soon as you concentrate production, processing must be concentrated as well. The size of the processing facility and the concentration of poultry inherently cause many of the problems.

The factory house has inherent problems that require antibiotics and hormones to maintain productivity. The processing, which begins after birds are loaded on trucks and driven for up to three hours to the processing plant, is extremely filthy.

The entire poultry industry is based on inherently improper models. It is not a pretty picture, but it explains the fuel being added to the animal rights movement, the environmental movement, and the anti-farmer sentiment in public policy.

The American Heart Association, doctors, and the USDA all warn people about the cholesterol levels in animal proteins, urging them to switch to vegetable oils and salads instead. As a result, the percentage of calories from greens in a person’s diet decreases.

The difference between conventional and forage-based chicken is that the former lacks muscle tone, and soaks up water from the chill tanks during processing. The industry is fighting proposals to mandate air chilling instead of water chilling.

It is time for confinement dairies, feedlots, broiler houses, and egg factories to defend themselves in a court of ethics. Their practices not only foster a row crop agriculture and its accompanying use of chemicals and topsoil loss, but also engenders sickness in our society.

I had a love affair with farming and business as a young boy. I would sell eggs and rabbits to local customers. My brother had a rabbit business, and we tried many things to keep the rabbits in the portable rabbit hutches, but we could never keep them there.

I began selling eggs at a farmer’s market, and as my flock grew, I needed a more efficient way to butcher the chickens. I bought a chicken picker from a man on the Eastern Shore, and with that picker, I could butcher thirty old hens in a couple of hours.
