I have followed a pretty strict diet most of my life and it has paid off in many ways. I’ve written books, owned weight loss clinics and have been part of an elite group in the fitness industry. Going gluten free had changed my collegues’ life forever. So much so, that I encouraged her to write this book. The change that happened to her was pretty phenomenal. You could see the gradual change each day. She went from being sluggish and tired, to energetic and lively.
 
Don’t be fooled by her name, Bubbles Brewer. She is in no way a bubble-head. She uses that name to put people at ease when they see her physic. Her tall stature, lean body mass and bubbly personality would lead you to believe she’s tuned into something far greater than just a diet. Part 1: Going Gluten Free
Chapter One - What is going on?
Why is Gluten Free everywhere now? Why wasn’t it even heard of for decades and now it’s in every store, every city and every pantry? Why is it such a big deal now? Why didn’t we feel bad before? Why now?!
 
Because, my new found friend, we are evolving as humans and not into better humans. Our diet may be harming us, even killing us. You probably know someone who has been touched by cancer or heart disease or diabetes. Why? Shouldn’t we be getting healthier, better educated or enlightened by now? We might be going backwards in our progression. We should be living longer, happier lives by now.
 
Why are some professional athletes going gluten free? Why is their game improving? One example is tennis player, Novak Djokovic. He won the Wimbledon in July 2011 after purging gluten from his diet. Another professional gluten free athlete is Kyle Korver of the Chicago Bulls basketball team. He went gluten free in 2010 and has said, “I definitely have more energy and just feel cleaner.” And finally, swimmer, Dana Vollmer, won the Gold Medal after going gluten free. She had suffered unexplained stomach aches, so severe, that it landed her in the hospital. Doctors could not identify the problem. “I always thought it was nerves or stress or ‘my stomach’”, she said. She even suffered from unexplained fatigue as well. “I could make it through the first hour of practice and then I fell off a cliff,’ she said. “I didn’t have any endurance and we didn’t understand why. I had so many blood tests and saw so many doctors and nobody really knew.”
 
What could be the worst thing that could happen to you for trying to limit your gluten intake? Pass on the “free” bread before a meal at a restaurant, just to see if you can. Challenge yourself to try to ween off pizza or white bread, even whole wheat bread is not what your body always needs. It has too much “glue” inside or “gluten” is the term. Have rice with dinner, not pasta. Don’t buy those cute boxes of pre-made meals. Would you feed that to a baby? No. You’d want fresh healthy food for a baby, to give them the very best start in life and growth. Do the same for yourself, even if it’s only for two days. Try it. See how you feel. Write to me or Facebook me. We can compare notes. I wish someone had made it more obvious to me years ago! Maybe I wouldn’t have been so anemic as a child. Maybe I would have run faster or further. Maybe I would have.......
 
What the heck is gluten? I wasn’t even familiar with the word. Imagine being healthy and vibrant one day and then for the next 12 months, sick and tired. Not clinically sick, but constant sinus infections, constant headaches and living on Ibuprofen daily. Within those 12 months, I was on penicillin 11 times. It should have been more, but, wow, I wanted to keep my immune system alive!
 
Are you going to finish that? Yes, that giant plate of pasta with the basket of bread and your ice cold beer? Going gluten free won’t deprive you of any of these, like you might think. Doors will open that you haven’t even thought of opening. Walk through, try it, see if you feel any better. “Nothing ventured, nothing gained.” “You can’t win, if you don’t play.”
 


Chapter Two - What is Gluten -
Think of gluten as “glue.” It’s a rubbery protein composite that is found in grains such as wheat, barley and rye. Most breads, pastas, baked goods and seasonings contain gluten. It gives elasticity to dough and will help it rise and maintain its shape. It’s also used to make gravy, soy sauce and many condiments. Sometimes it turns up in unexpected sources, including medicines, vitamins, candy and cosmetics.
 
 
What is Gluten Free -
It is a diet that excludes wheat, rye and barley, basically. You may have to adhere to this diet for life if you are diagnosed with celiac disease. There are no specific medications for this condition. If you don’t go gluten free when having celiac disease, you can develop complications such as osteoporosis, anemia and also cancer.
 
A gluten free diet is a return to foods that are good for you!
 
Those who aren’t fighting gluten sensitivity as a health necessity, may still follow a gluten free diet. In fact, if you decide to go gluten free and you aren’t even gluten sensitive, you may just find out that you feel better because you are eating more healthfully.
 
“A gluten free diet is a return to foods that are good for you. Fruit’s, vegetables, rice, corn - all those are healthy.” says Shannon Rentz, RD, LD, adult clinical outpatient dietician at Oregon Health Sciences University in Portland.
 
A change in diet can make a huge change in a person’s physical AND emotional state.
 
 
What is Gluten Sensitive -
It has been called many names: gluten sensitivity, gluten hypersensitivity, nonceliac gluten intolerance and/or nonceliac gluten sensitivity. Whatever the name, it is characterized by diarrhea, abdominal discomfort or pain, bloating and lastly, flatulence.
 
Also, there can be extraintestinal symptoms: headache, lethargy, attention deficit hyperactivity disorder (ADHD), ataxia (wobbliness, poor muscle control) and recurrent oral ulcers.
 
“I do not believe it is a media-made condition, but rather it probably is another ‘new’ disease,” commented Lawrence Brandt, MD, a gastroenterologist at Montefiore Medical Center in New York City.
 
 
What is Celiac Disease -
One form of gluten allergy or sensitivity is celiac disease. It can cause real damage to the body. The villi (they are in charge of taking nutrients from your food and they feed your body), become damaged. Only time and a strict gluten free diet will reverse the damage within a year or two. Yes, it can be reversed. If you have been diagnosed with celiac disease, then you already know that all of those symptoms were screams for help from your body.
 
Once thought to be a rare disease and usually found among children, celiac disease is now seen as one of the most common genetic diseases in the world. It was only five years ago that the National Institutes of Health classified the autoimmune disease as a common disorder.
 
However, up to 97 percent of people are NEVER diagnosed. Celiac disease is diagnosed using blood tests and a small bowel biopsy. About 1 in 133 people has celiac disease, according t
