Dining Out

Dining in Naples and on the Amalfi Coast is a mouth-watering experience. Everything seems to taste that little bit better here – the tomatoes are sweeter, the mozzarella is silkier and the caffè is richer and stronger. In the shadow of Vesuvius, food, identity and pride are inseparable.

Pizza Napoletana
In 2017, Unesco declared Neapolitan wood-fired pizza part of the ‘intangible cultural heritage of humanity’. And yet, the city is also famous for pizza fritta (fried pizza), a deep-fried, calzone-like concoction traditionally stuffed with provola (provolone) cheese, ricotta, cicoli (dried lard) and a dash of tomato sugo (sauce). Good pizza fritta is light and easily digestible, not to mention a cheap lunch staple.

Regional Pasta
Naples’ classic pasta dishes include spaghetti alle vongole, a simple yet spectacular concoction of spaghetti with clams, garlic, peperoncino (red chilli pepper) and fresh parsley. A significantly heartier staple is slow-cooked pasta alla genovese, an onion-and-beef sauce commonly paired with ziti (a thin, tubular pasta). Its soulmate is ragù napoletano, a rich, intense combin-ation of slow-cooked tomato sugo , onion and meat that is a Sunday classic.

Sweet Treats
Neapolitans adore babà, a rum-soaked sponge cake, and sfogliatella, a pastry filled with cinnamon-spiced ricotta. The latter comes in two forms: denser frolla (shortbread pastry) and flakier riccia (filo pastry). Capri claims torta caprese, a flourless almond-and-chocolate torte, while the Amalfi Coast claims delizia di limone, a sponge cake filled with lemon cream and limoncello (lemon liqueur) and coated in a lemon glaze.

Although southern Italians aren’t big drinkers, Naples and, to a lesser extent, the Amalfi Coast offer an increasingly varied selection of venues in which to imbibe. You’ll find well-worn wine bars and a new wave of options focused on craft beer, cocktails and even specialty coffee.

The Art of Caffè
While swilling caffè is an integral part of local life, it’s usually in the form of a quick swill standing at the bar; Neapolitans down their espresso in three sips or less. When ordering an espresso, ask for un caffè . Some places will automatically sugar the coffee, so ask for it amaro (without sugar) if you don’t want it zuccherato (with sugar). Most baristas will offer you a glass of water, either liscia (still) or frizzante (sparkling), with your espresso. Drink it before your coffee to cleanse your palate. To drink like the locals, keep milky options like caffè latte and cappuccino for the morning. For a weaker coffee ask for a caffè lungo (a watered-down espresso in a larger cup) or a caffè americano (an even weaker version of the caffè lungo ).

Spirited Locals
Sorrento’s lauded limone di Sorrento (Sorrento lemon) – known for its extreme juiciness and high levels of essential oils and mineral salts – is used to make liquore di limone di Sorrento, the area’s premium limoncello liqueur. The Amalfi Coast’s local lemon, the limone Costa d’Amalfi, is also used to make the famous lemon liqueur. Yet, the Amalfi Coast is known for more than limoncello, using local mountain herbs and plants to create classic digestivi like finocchietto (wild-fennel liqueur), fragolino (wild-strawberry liqueur) and nocillo, a liqueur made with walnuts traditionally harvested on the night of St John (24 June).
