About the Author
To my husband, Steve, my dear sous-chef for
over thirty-nine years. Spiritual relationships
are essential to life, like the air we breathe.
Thank you for sharing this journey of life
and for never once asking me,
What is this?
We re spending $147 billion to treat obesity,
$116 billion to treat diabetes and hundreds of billions
to treat cardiovascular disease and the many types of
cancer that have been linked to the so-called Western diet.
One recent study estimated that 30 percent of the increase
in health-care spending over the past twenty years could
be attributed to the soaring rate of obesity, a condition
that now accounts for nearly a tenth of all spending on
health care. The American way of eating has become the
elephant in the room in the debate over health care.

What You Will Learn in This Book
How food addictions are industry-inspired and emotionally created. How you can heal them by getting your power back and recognizing that stuffed emotions can create weight issues. On a raw vegan diet, most people lose at least ten pounds (4.5 kg) a month eating all they want. It is difficult to remain over-weight on a raw-foods diet.
If you are not eating an enzyme-rich, plant-based diet, your body may be stealing enzymes from your pancreas and heart just to digest. This activity of robbing Peter to pay Paul can cause diabetes and heart disease. Eating a green salad daily can make a healthy difference in how you look and how you feel every day.
Raw plant enzymes reverse aging. Research and patient studies support this fact.
Are you suffering from malnutrition? Are your children failing to thrive? Are you or your loved ones sick often? Inflammatory processes in the small intestine prevent the absorption of vital nutrients. People who eat only processed foods and fail to eat raw fruits and vegetables may be starving and overeating. More people die in the United States from overeating than undereating.
No one teaches us what we need to eat every day to achieve optimum health and prevent disease. This book gives you an easy-to-remember formula.
Animal foods are not essential forms of vitamins, protein, calcium, amino acids, or essential fats. Most heart-protecting, cancer-fighting, and immune-enhancing substances come from the phytochemicals in plants. Citrus fruits and apples are high in pectin, which helps to lower cholesterol naturally. According to the U.S. Department of Environmental Health:
Children who ate conventional diets had mean pesticide concentrations in their urine nine times higher than the children who ate organic. Their levels indicated that they had exceeded safe exposure levels set by the Environmental Protection Agency (EPA) and were at increased risk to their health. By contrast, those children who ate organic foods were well within the EPA levels deemed to cause negligible risk.
Could cancer lose its grip on modern societies if they turned to a balanced vegetarian diet? The answer is yes, according to two major reports, one by the World Cancer Research Fund and the other by the Committee on the Medical Aspects of Food and Nutrition Policy in the United Kingdom.
The McDougall Diet notes: The truth is that Americans consume six to ten times as much protein as they need. That excess protein overworks the liver and kidneys, causing both these organs to become enlarged and injured. Excess protein consumption causes the kidneys to pull large quantities of calcium from the body, causing bones to weaken and kidney stones to form.
In 1914, an apple contained almost half the daily requirements of iron, but today you would have to eat twenty-six apples to get the same amount of iron. In just under one hundred years, apples have declined in the following: calcium 48 percent, phosphorus 84 percent, iron 96 percent, and magnesium, the heart-helping nutrient, has dropped 82 percent. The amount of calcium in vegetables has also declined: 81 percent in cabbage, 92 percent in lettuce, and 56 percent in spinach. There is little or no iodine or zinc in our produce unless the soils are fed iodine or zinc.
Undiagnosed food allergies create many diseases. Processed foods are the worst offenders. Eating organic, raw vegetables and fruit eliminates many of the antigens that cause allergic reactions and subsequent disease.
