This month’s highlight appeared in the monthly magazine Resto Gratuit Pros (circulation: 100,000) which focuses on information and news around gastronomy and culinary topics. Three pages were dedicated to the “Fruit of the month: The cranberry”. Showing a nutrient table first, the article describes how the cranberry got its name, where it comes from and which health benefits the red berry has. The second part focuses on usage and versatility for cooking. The CMC’s former culinary spokesperson Chef Martial Enguehardt, is quoted that the cranberry is a perfect ingredient for different dishes due to its natural lightly sour taste and the SDC’s sweetness. On the following two pages, two recipes are presented that were produced by Chef Martial in November / December 2008: o Terrine of fois gras with dried and fresh cranberries o Jelly egg in a cranberry meringue juice Both recipes are illustrated by a photo.
