INTRODUCTION
Originally from Paris, based in New York for five years, I m permanently struck by how different habits, routines, and expectations remain on opposite sides of the Atlantic. Parisian girls won t hesitate to show up in jeans at a fashion event, still love to smoke on the terraces, and don t feel guilty for never, ever working out. They don t line up in the snow at 11:00 AM on a Sunday to get waffles and scrambled eggs courtesy of Peels. They won t graciously accept No from a bouncer, even if they have failed to RSVP . And they won t go home at midnight for some beauty-sleep emergency. They also wouldn t declare a sweet I love your shoes! to the girl in the line at the deli. But they will marvel at the quality and quantity of services, delivered with professional kindness, found almost everywhere in New York City. When you re French, you never quite get used to it.
While writing this guide for my visiting friends, I was impressed by the quality of experiences I found in Brooklyn. When, two years ago, Cond Nast Traveler named the borough one of its 15 best places in the world to see right now (which included the Maldives and Sri Lanka), Brooklynites responded with eye-rolling, mortified to be reduced to grass-fed-beef eaters and wine-bar fiends.
Of course, they re far more diverse than that, as the cohort of supermodels, editrixes, AAA -list stylists, and CFDA -approved designers based there can testify. Generously, these fashion insiders have agreed to take us on a stroll down the path of the delicious, the novel, the healthy, and the adventurous, from the quaint and fashionable Carroll Gardens-Cobble Hill area to posh Brooklyn Heights, from the leafy Fort Greene to the hipster heaven that is Bushwick.
I hope you ll enjoy discovering their tips and insights as much as I did.

These restaurants cater mainly to those who don t eat things with faces or are scared of bacon. But they can be a great home base for the gluten-sensitive or anti-wheat crowds. Embracing the fight against hormone- and pesticide-filled, greasy, processed food, they ll help you to pack as many nutrients as possible into your thirty-five-bites-per-meal diet.

These sister restaurants offer organic, 100 percent vegan cuisine for conscientious gourmets. CANDLE CAF is low-key and frequented by yoga teachers and scholars, while CANDLE 79 provides a fancier, two-story, fine-dining experience, with curiosities such as Seitan Piccata, their standout signature dish (allegedly Paul McCartney s favorite).

Founded in 1971, these canteens remain loyal to their pure macrobiotic-organic origins. The SoHo location is the one crowded with stylists munching on tempeh croquettes, wild salmon, and watercress salads. Sun-drenched and often half-empty at lunch, but always pretty packed for dinner.

Cozy, elegant (dark wood, fireplace), and strictly ethical, these restaurants are organic-vegan gourmet bliss for anyone looking for a fine dining experience. Strict about their no-dairy/no-bad-fats policy, their seitan medallions (that taste like real meat) and black-eyed-peas cake have brought tons of fashion fans here.

Dirt candies is the nickname given to vegetables by the chef/owner, Amanda Cohen, who has just released a comic-book cookbook. A small joint that has acquired a reputation as a gastro-organic heaven. Caveat: Only nineteen seats.

Vegetarian restaurant with amazing food that looks more beautiful and refined than anything else in New York, says photographer and artist Thomas Dozol. The shojin cooking served here, an ancient Japanese cuisine from Zen Buddhist monasteries, employs only seasonal vegetables, wild herbs, seeds, and grains.

The favorite of chic vegetarian Mr. Mickey, Paper magazine s editorial director. He s way too classy to tell you that he bumps into the musician Devendra Banhart there. So we do. Meat lovers can enjoy the relaxed atmosphere, the soy protein with cashews/mushrooms, the risottos, and the general spirit of Asian-inspired cuisine.

Just near Washington Square, this modest vegan bistro is helmed by a former chef from CANDLE CAF . It s open to dairy products and specializes in cool curried vegetables. Forgive the spartan interior-they also deliver or do catering-the service is lovely.

Another oldie, this dark, grassroots, Ibiza meets Kerala vegan cantina is rumored to be a usual haunt for major models like the Rayder sisters and Abbey Lee, as well as for many typical East Villagers. Plan B: the surly ANGELIKA KITCHEN (300 E 12th St., nr Second Ave., EV; Tel. 212.228.2909), with communal tables, an undefined dress code, and a thick atmosphere of self-righteousness that can easily scare the rookie.
