AGED GOAT CHEESE W DRIED FRUIT MOSCATO COMPOTE & TOASTS

2ouncesdried apricots, cut 1/8" julienne 1ouncedried cranberries 1ouncedried cherries 1ouncedried currants 8ouncesmoscato d'asti, (sweet wine from italy) ½cuphazelnuts, roughly chopped
2tablespoonssugar 4tablespoonsunsalted butter, softened 4 slices good-quality white bread, toasted (arnold or pepperidge farms) 8ouncesaged goat cheese, caraway round (preferably coach farm)
In a medium sauce pan over medium-low heat, stir together the apricots, cranberries, cherries, currants and wine. Bring to a boil, turn off the heat and let stand 30 minutes. The fruit will plump to twice their original size and the wine should just moisten the fruit.
In a large mixing bowl put the hazelnuts, sugar and soft butter. Blend with a spoon until homogenous. Spread this mixture over the toast in a thin layer all the way to the edges. Remove the crusts with a sharp knife. Cut each toast into triangles, and divide the toast among 4 saucers.

Using 4 large martini glasses divide the fruit mixture and juices evenly. Place each glass on a saucer with the toast. Shave goat cheese with peeler over each glass and serve.
ALGERIAN LAMB SHANKS WITH CARDAMOM AND ORANGE

4 lamb shanks, external fat trimmed Salt, to taste, plus 1 Tbs. salt
Freshly ground pepper, to taste 4tablespoonsextra-virgin olive oil, plus more for serving 1lb.yellow onions, diced
¼cuppeeled garlic cloves 1tablespoonfinely chopped fresh ginger 2 cardamom seeds, skins removed pn of saffron 1teaspoonchili flakes 1teaspoonground cloves

Preheat an oven to 350℉.
1teaspooncaraway seeds 2teaspoonsfennel seeds ½ cinnamon stick 2tablespoonscurry powder ½cupblanched slivered almonds ½cupgolden raisins 2 cans (10 oz. each) diced plum tomatoes 1 bottle white wine Zest and juice of 1 orange 1lb.carrots, peeled and coarsely diced 1 large fennel bulb, trimmed and coarsely diced
Generously season the lamb shanks with salt and pepper. In an ovenproof deep saute pan or Dutch oven over high heat, warm 2 Tbs. of the olive oil until nearly smoking. Working in batches, brown the
shanks, 4 to 5 minutes per side. Transfer to a platter.

Add the remaining 2 Tbs. olive oil, the onions and garlic to the pan and saute, stirring, until the onions are tender and translucent, 4 to 5 minutes. Add the ginger, cardamom, saffron, chili flakes, cloves, caraway, fennel seeds, cinnamon, curry, the 1 Tbs. salt, almonds and raisins. Saute, stirring occasionally, about 5 minutes more. Add the tomatoes, wine, orange zest and orange juice and stir to mix well. Submerge the shanks in the liquid and bring to a simmer. Cover, transfer the pan to the oven and cook until the meat nearly falls off the bone, about 2 hours.
Stir the carrots and fennel bulb into the stew, cover and bake until the vegetables are tender, about 15 minutes more. Drizzle each serving with olive oil.
Comments: This braised lamb stew is wonderful served over a bed of steamed couscous. The couscous can be served plain or tossed with raisins, almonds and spices. Either way, it will absorb the flavorful broth from the stew.

1 ½lbs.green cabbage, cored, shredded 3tablespoonscider vinegar, malt cupsmayonnaise
1 onion, small, grated 2 carrot, medium, grated ¼teaspoonsalt
In a large mixing bowl, toss the cabbage with the vinegar and salt. Grate the carrots and optional onion directly into the bowl.
