ACAPULCO CHICKEN ENCHILADA

3 servings Source:Enchilada Greats

3cupschicken; cooked, shredded ½cupscallions; w/green, minced

½cupalmonds; chopped, blanched ½teaspoonsalt 3cupsenchilada chili sauce 8 fresh corn tortillas ¾cupssour cream

½cupshredded cheddar cheese ½cupsliced ripe olives --for garnish---

sour cream and scallions --enchilada sauce--- 2tablespoonsvegetable oil ⅔cupsonion, chopped ¼cupgreen bell pepper, chopped 1 garlic clove, minced 1cuptomato paste

1cupwater 1teaspoonchili powder, (or more) 1teaspoonsalt ½teaspoondried oregano

In small bowl, toss together cooked shredded chicken, scallions, and almonds. Sprinkle on salt. Mix and set aside. To prepare chili sauce, heat oil in saute pan over med-high heat; add onion, bell pepper, and garlic.

Saute until vegetables are soft. Stir in tomato paste, water, chili

powder, salt and oregano. Blend well. Lower heat, cover and simmer for 5 minutes. Preheat oven to 350 deg. Lightly oil bottom of shallow ovenproof casserole dish.

Dip a tortilla in hot sauce until partially saturated. Then place tortilla in casseroles dish; fill with 1/8 of chicken mixture, and top w/1 T sour cream; roll into an enchilada. Place in dish seam side down. Repeat with remaining tortillas. When casserole is filled, drizzle remaining sauce over top.

Sprinkle with cheese and top with olives. Bake for 15 minutes. or until cheese and sauce are hot and bubbling. Serve with additional sour cream and chopped scallions on the side.

ACAPULCO'S CRAB-AVOCADO ENCHILADAS WITH CILANTRO CREAM

3 servings Source:Enchilada Greats

SOUR CREAM SAUCE ¼teaspoonminced garlic ½teaspoonsalt 1cupsour cream 2tablespoonschopped onion 2tablespoonschopped cilantro 1 Dash sugar ENCHILADAS

SOUR CREAM SAUCE

6 corn tortillas Oil or lard 1 ½cupscrab meat 6tablespoonsminced onion Shredded Jack cheese Pitted black olives

Avocado slices Sliced peeled tomatoes

Puree garlic with salt. Combine sour cream, onion, cilantro and sugar. Add garlic mixture and stir gently to blend well.

ENCHILADAS

Chapter 1: A-M

Heat tortillas, 1 at a time, in oil until soft. Place 1/4 cup crab meat in center of each tortilla, then sprinkle with 1 tablespoon onion. Spread a little Salsa Con Tomatillos on top. Roll enchiladas, and place, seam- side down, in shallow baking dish. Cover with remaining Salsa Con Tomatillos. Sprinkle generously with cheese.

Bake at 400 degrees about 10 minutes, or until hot and cheese melts. Serve with dollop of Sour Cream Sauce and garnish with olives, avocado and tomato slices. Makes 6 enchiladas.

AMANIZED ENCHILADAS

1 servings Source:Enchilada Greats

--SAUCE--- 3 cn Cream of chicken soup (or just one large can) 1teaspoonOregano 1teaspoonSage (or less)

1teaspoonCumin (or less) 2cupsWater

7ounces(to 8 oz.) Diced chilies x Garlic powder or minced garlic

---FILLING--- 1/2 lb Ground beef or chicken (can -use cut up chicken breast) Chopped onion ts Chili powder (or less) c Grated cheese (Monterey -)

Simmer soup, oregano, sage, cumin, water, chilies and garlic for 30 minutes.

Brown beef or chicken with onion and chili powder.
