Chapter 1
What are freezer meals
You are probably quite familiar with TV dinners or prepackaged meals. You must have seen them at the supermarkets and in all likelihood you must have tried and tasted a few of them too. Freezer meals are actually similar to prepackaged meals in many respects. They both pertain to the practice of preparing meals partially and in bulk for storage in a freezer. The idea is to have ready meals anytime that will require very little final preparations (usually only requiring re heating) prior to consumption.
The big difference is freezer meals are homemade which means you get to enjoy the flavor and aroma of home cooked meals; they are healthier because you get to choose only the nutrient ingredients for your meals; and they are definitely a lot cheaper because you get to buy in bulk which should give a heap of savings. With proper preparations, you can cook only once and yet you d be able to feed the family the whole week or even a month.
The Benefits of Freezer Meals
The main benefits of freezer meals can be summed up into four words convenience, time, nutrition, and savings
Convenience - freezer meals in storage offers a lot of convenience particularly after a long, tiring day at work. All you need to do is to take out a freezer meal in the morning and simply reheat it at dinner time when you get home.
Saves you time - freezer meals are prepared way ahead and only once for a week or two or even for a month of eating. There is no more need for enslaving yourself to the kitchen every time just to prepare a single entr e. With freezer meals, you prepare each entr e in bulk much like an assembly line food processing where you prepare and cook 2 to 3 times each recipe and store them in the freezer for future consumption.
Nutrition Home cooked meals prepared from your own recipes using carefully selected ingredients definitely gives your family the much needed nutrients they deserve. There is no more need to resort to junk foods or make a trip to the nearest fast food chain when the hunger pangs strike any member of the family.
Lots of Savings - You ll be eating out a lot less and you d be able to prepare sumptuous yet inexpensive meals too. You also can buy ingredients in bulk. And, there is going to be a lot less food that will be wasted as you can recycle leftovers and freeze them into a different meal. All of these translate into great savings.
Freezer meals benefit you in a lot more ways than you realize. You can treat surprise guests to a dinner without worrying about what to serve them. You can even extend casual invitations to lunch or dinner without worrying about the preparations.
Shopping and preparing freezer meals are not easy tasks but you can turn these activities into quality bonding time for the whole family by getting them involved. It can be the most fulfilling one day activity for the family which they can always look forward to doing with you.
The freezer meals are no different from your home made cooking. In fact, you can use your own recipes instead of following readily available freezer meal recipes. The only difference is in their approach to cooking. Freezer meals are cooked in bulk - in quantities that are good for two to three meal servings. Other than that, there really is no difference between what and how you used to cook your meals before to what and how you prepare and cook your freezers meals.
Since it involves freezing and storing food over a period of time, there are certain things you must be aware of. You have to know which food can be frozen best than the others. You have to know how to package them properly before storing them in your freezers. You have to be familiar with freezer burns and know how to best avoid them. In other words, cooking freezer meals is not as intuitive as regular home cooking. You have to plan and prepare the meals well before you turn on the oven or the stove. You have to do some research to avoid wasting food.
The good news is, properly prepared freezer meals can last for weeks or even months. One whole day spent in the kitchen preparing freezer meals will give you 29 days reprieve from kitchen detail. Half a day spent in preparing freezer meals wives you two weeks rest. The best part is your family gets eat what they like most and you get to avoid having to drop by a fast food store when you are hard pressed for time.
Chapter 2
Freezer Meal Tips and Tricks
Almost all types of foods can be frozen with a great degree of success provided you do it properly. If you are considering freezing food, there are some simple guidelines you must follow to avoid wastage. Even the foods which appear to be the most unlikely candidates for freezing can be frozen using some small tweaks.
For example, if you wish to make a frozen seafood chowder or a frozen shrimp stew, you prepare and cook the stew without the seafood. The reason is simple any seafood tends to become tough when overcooked. After cooking the stew, cool it down before freezing it separately from the seafood. You only add the seafood when you are ready to serve the meal. You add it as the last stage of your cooking while you are reheating the stew prior to serving.
Foods that don t freeze well or lose some of their integrity and texture when frozen can still be part of your freezer meals by using tweaks such as described above. But before you start learning the many tips and tweaks to use for freezer meals, you have to be familiar with what types of foods freeze well and which foods changes in texture and degrade when thawed after being frozen.
Food that Freeze Well
Food that Will Change In Texture when Frozen and Thawed Soups, casseroles, and stews freeze very well. Fruits and vegetables tend to soften when frozen. Those with high water content tend to change in texture and consistency when frozen. Vegetables and fruits require some preparatory work before freezing. Pasta sauces, meatballs, marinated meats, meatloaf, and poultry. Potatoes freeze great but they must be cooked before freezing to insure they don t turn black. Beans, tortillas, and cooked rice Pastas will become much soften after they are frozen and should only be cooked about three quarters of the recommended time. Also pastas frozen in liquid or sauce will absorb a lot of the moisture. Sliced raw or cooked meat Milk and dairy products - they tend to separate when thawed after being frozen for some time Dessert except those with mayonnaise Cheeses they crumble when sliced after being frozen. They can be used though for cooking or melting. Raw meat, fish, and poultry except eggs in their shells. Herbs they retain their flavor even after being frozen but they tend to lose their texture. They won t be good as garnishing but they are still perfect for cooking. Breads and other baked products including cakes, bagels, muffins, pies, dough, cookies (baked or raw) and pizza crusts (baked or raw).
