AMERICAN LASAGNA (USDA)

2 ¼lbs.lean ground beef cupinstant minced onion ¾teaspoonsgarlic powder 4teaspoonssalt teaspoonsred pepper, crushed 1tablespoonoregano 3tablespoonsparsley flakes 18ouncestomato paste, 3 (6-oz) cans 24ouncestomato sauce, 3 (8-oz) cans
2 ¼cupshot water 3 large eggs, beaten

3lbs.cream style cottage cheese 1lb.lasagna noodles, cooked, (18 noodles) 12ouncesprocessed cheddar cheese,
shredded ¾cupsparmesan cheese
Line four 8x8-inch baking pans with heat-resistant freezer wrap. Allow enough extra wrap to fold over top. Use one pan for each six servings or one-fourth of the recipe. Do not line pans for food to be served without freezing.
Crumble beef; cook until lightly browned. Stir in onion. Cook until onion is tender. Drain off fat. Stir in seasonings, tomato paste, tomato sauce, and water. Simmer for 5 minutes, stirring occasionally. In

another bowl, blend eggs with cottage cheese. In each pan, spread a layer of meat mixture (about 3/4 cup). Add a layer each of noodles (2 1/4), meat mixture (about 3/4 cup), cottage cheese mixture (about 3/4 cup), processed cheese (1/3 cup), and parmesan cheese (1 1/2 tablespoons). Repeat layers until all ingredients are used. Pack food tightly to avoid air pockets.
TO SERVE WITHOUT FREEZING Preheat oven to 400℉. (hot). Bake 30 minutes or until sauce bubbles at edges.
TO FREEZE Cool for 30 minutes at room temperature. Complete wrapping by pulling paper up over top of food. Put edges of wrap together and fold several times so paper lies directly on top of food. Fold ends of freezer wrap over the top and seal with freezer tape. Label with name of food, date of freezing, and last date the food should be used for best eating quality (about 6 months). Freeze for 10-12 hours before removing packages from the pans.
TO HEAT FROZEN FOOD Preheat oven to 400℉ (hot). Remove freezer wrap. Place food in baking pan. Bake 1 1/4 hours or until sauce bubbles at edges and center is hot.
VARIATION Italian Lasagna -- Use ricotta cheese in place of cottage cheese and mozzarella cheese in place of processed cheddar cheese.
Author Note: This recipe is for 24 servings (about 2 1/2 by 4 inches). Directions are given for dividing the prepared food into four parts of six servings each. One part may be completely cooked and served at the time of preparation. The remaining parts may be frozen.
ARTICHOKES WITH FRESH GAZPACHO DIP

4 medium California artichokes, prepared for cooking ½lb.tomatoes, seeded, chopped
1 ½tablespoonstomato paste 2teaspoonsred wine vinegar 2teaspoonslime juice 1 ½teaspoonsolive oil

2teaspoonsminced shallots ¼cupminced green pepper ¼cuppeeled, chopped cucumber 2teaspoonschopped fresh dill
¼teaspoonfreshly-ground black pepper 3 drops red pepper sauce -, (to 6 drops)
In a blender or food processor, place tomatoes, tomato paste, vinegar, lime juice, and oil. Cover and process until blended. Transfer mixture to a bowl; stir in remaining ingredients except artichokes. Cover and refrigerate until chilled.
Meanwhile, cook the artichokes. Stand the prepared artichokes in a deep saucepan or pot with 3 inches of boiling water. (oil, lemon juice and seasonings may be added to cooking, if desired).
Cover and boil gently 25 to 40 minutes depending on size, or until a petal near the center pulls out easily. Stand artichokes upside down to drain.

4ounceswhipped cream cheese with, chives 2ouncesham, diced 2teaspoonshoney mustard teaspoonfreshly ground pepper 1cupricotta cheese cupradishes, diced cupcucumbers; seed, dice ¼cupparsley, chopped ½teaspoonsalt

¼teaspoonlemon peel, grated pizza snack 1 6 oz can tomato paste 1teaspoondried oregano leaves 5 whole wheat or white bagels, split ½cupgreen bell pepper ½cupblack olives, chopped 3ouncesmozzarella cheese, shredded
This is for 4 bagels, halved and toasted.
NEW YORKER-Combine cream cheese, salmon, sour cream, lemon juice, dill, salt and pepper.
MIDWESTERN-Combine cream cheese, ham, mustard and pepper.
CALIFORNIAN-Combine ricotta, radishes, cucumbers, parsley, salt and lemon peel.
PIZZA SNACK-Heat oven to 450F. In small bowl, combine tomato paste and oregano. Spread each bagel half with 1T paste mixture. Place on ungreased cookie sheet. Top each with bell pepper; sprinkle with cheese.
Bake at 450F for 6 to 8 minutes or until cheese is melted.
