AMERICANIZED CHICKEN CHOP SUEY

2 chicken breast, skinned, halved & boned 1teaspoonsalt 1teaspoonginger, minced, crystallized 1cupcelery, sliced 5ounceswater chestnuts, sliced &

1 onion, sliced 2cupschicken bouillon 2tablespoonssoy sauce
1cupmushrooms, sliced 1lb.bean sprouts, drained 2cupscooked rice ½cupslivered almonds
Cut chicken into strips about 2-inches long and 1/2-inch thick. Place in crockpot with salt, ginger, celery, water chestnuts, onions, bouillon, and soy sauce.
Cover and cook on low 5 to 6 hours.
Turn control to high. Add mushrooms and bean sprouts.
Cover and cook on high 15 minutes. Serve over hot rice.
Sprinkle with almonds. Serve with extra soy sauce, if desired.

Prepare egg noodles according to package directions; drain.
Each serving provides: 307 Calories; 31.9 g Protein; 26.6 g Carbohydrates; 8 g Fat; 84.4 mg Cholesterol; 1155 mg Sodium.
ASIAN CHICKEN POT PIE

In a large skillet or wok, Sauté chicken, carrots, scallions and red bell pepper in oil until chicken is opaque and white, about 4 minutes, stirring constantly. Add soy sauce, celery, water chestnuts, garlic powder, white pepper and cilantro. Mix all ingredients together, cover and simmer for 5 minutes. Stir in cooked egg noodles. Sprinkle with toasted almonds, if desired.

ASIAN CHICKEN AND NOODLES

1tablespoonvegetable or olive oil 1lb.boneless chicken breasts, (without skin) cut into julienne strips, (1 1/2 x 1/4-inch) 2 carrots, peeled and thinly sliced
1 bunch scallions, chopped ½ red bell pepper, thinly sliced ¼cuplow-sodium soy sauce 1cupchopped celery 4ouncessliced water chestnuts ½teaspoongarlic powder ½teaspoonwhite pepper 1teaspoondried cilantro 2tablespoonstoasted almonds, (optional)

4 6 oz boneless and skinless chicken breast ½teaspoonChinese black vinegar 1 head broccoli
½lb.water chestnuts 1 large carrot 1 stalk celery 1 small bok choy 2tablespoonsolive oil 2tablespoonscornstarch

½teaspoonChinese 5 spice salt and pepper to taste 3 garlic cloves, chopped 2tablespoonschopped onion
1teaspoonchopped ginger 1cupchicken broth 8 sheets phyllo dough 2tablespoonsmelted butter 1tablespoonchopped Chinese chives 4 large rosemary sprigs
Cut chicken into 2-inch strips. Cut all vegetables into 2-inch strips and blanch. In a large skillet over high heat, sauté the chicken strips with the vinegar. Add in the cornstarch.
Season with 5 spice powder, salt and pepper. Add garlic, onion and ginger.
Stir-fry for 5 to 6 minutes. Add chicken stock and vegetables.
Cook for 8 to 10 minutes. Check seasoning. Chill.
Layer four 1/2-inch sheets of phyllo dough, brushing with butter in between sheets and place in a four inch pie tin. Repeat the process for four pans.
Divide equally the chicken mixture on each pan. Add chives. Fold the corners into the center.
Bake in a 400℉ oven for 12 minutes.
Transfer immediately to serving plates and garnish with rosemary sprigs.

ASIAN RICE SALAD

2cupsleftover Asian rice pilaf 2 cloves garlic, minced (or
1teaspoonbottled) ½cupsliced water chestnuts coarsely chopped ¼cupthin carrot slices ¼cupthin celery slices 1tablespoonroasted peanuts, coarsely
Fluff leftover rice pilaf with a fork.
chopped 3tablespoonsoil, (preferably peanut) 1tablespoonrice or red, up to 3 wine vinegar ½teaspoonsugar
***OPTIONAL*** 3 green onions, (white and green tops), sliced
Add garlic, water chestnuts, carrots, celery, green onions and peanuts.
Combine oil, vinegar and sugar in a small jar, cover and shake to combine.
Pour over the salad and serve at once.
