About the Author
DR. JESSICA BLACK graduated from the National College of Naturopathic Medicine in 2002. She attended Cardinal Stritch University prior to her medical studies and graduated cum laude with a bachelor of arts. She was given the prestigious award of Outstanding Student of the Year in her year of graduation and had the honor of speaking to her graduating class. In 2006, Dr. Jessica published The Anti-Inflammation Diet and Recipe Book after working on perfecting her recipes and selling her book locally for a few years. Dr. Black enjoys promoting her book and giving educational lectures to the community. In 2010, she coauthored Living with Crohn s and Colitis: A Comprehensive Naturopathic Guide to Health and Wellness with Dede Cummings. She continues to share her passion for health through writing and in 2012 published the follow-up to the first Anti-Inflammation Diet book, More Anti-Inflammation Diet Tips and Recipes . She has given lectures nationally and internationally. In 2014, she was given the very first prestigious award I am NCNM from her medical school for her dedication to the profession and educational outreach.
Dr. Black and her husband, Dr. Jason Black, enjoy dividing their time between their two Oregon clinic locations offering family health care to Multnomah, Yamhill, and surrounding counties. A Family Healing Center, their shared clinic, has become a residency site associated with the National College of Naturopathic Medicine, and both doctors enjoy teaching the next generation of competent naturopathic physicians. She specializes in women s medicine including natural hormone balancing for menopause and thyroid and childhood wellness including chronic asthma and acute and chronic illness in children. Because of her thirst for knowledge, she continues to study and research vaccinations, hormones, new treatment ideas, and cutting-edge techniques used to improve people s health.
Dr. Black enjoys spending time with her husband and two beautiful, spirited daughters in addition to staying fit and healthy through diet and activities. They enjoy skiing and spending time outdoors.
In July 2013, she launched her new website, www.drjessicablack.com , which offers delicious healthy recipes and cutting-edge, up-to-date articles about health, hormones, food, and much more.

ONE S INDIVIDUAL CHOICE OF FOODS for themselves and their families has a great deal of effect on day-to-day health, as well as on prevention of chronic health problems. This is well recognized and documented in today s scientific world.
Many years ago, in my work with patients, it became evident to me that most people ate foods that were not good for them on a daily basis. When they made dietary changes and no longer ate food allergens or foods to which they were sensitive, they invariably began to feel better. Through years of experience and with the help of nutritional science, I was able to devise diets that helped most patients. From this evolved the anti-inflammatory diet recommendations.
When people need to change their diets, the most common question is always, Well, then, what do I eat? Fifteen years ago it was almost impossible to find acceptable substitutes for many of the common food allergens or foods that have been shown to cause chronic inflammation. Recipe books contained many of the foods that I was recommending people avoid, so they were forced to try to make substitutions on their own and then hope the recipe would be edible.
Dr. Black took it upon herself to come up with delicious recipes that require no (or few) substitutions. Just follow the recipe and, voil , a masterpiece. The tried and proven dishes you are about to discover will delight any discriminating palate. Jessica s work at preparing and testing the recipes on friends and relatives has resulted in a must-have cookbook. I TRULY LOVED PREPARING THE FOOD for this cookbook. Because I love cooking and love keeping myself and my family healthy, writing this book became a necessity so others could get the same satisfaction from cooking that I do. My husband and I are strong proponents of living healthy lifestyles, and we strive to impart our philosophy to as many people as we can. We figure if we can educate others, they in turn can educate the next group of people, and through the wonders of small talk we can create a collectively healthier population.
